Preparation of BIO Tomato Ketchup with Agave for 50 Servings

  1. Preparation: Prepare and weigh all ingredients. BIO-Tomatenmark 28TS: 4 kg, BIO-Agavendicksaft: 700 g, BIO-Essig, Tafelessig: 500 ml, BIO-Salz, unjodiert (Atlantik Meersalz): 100 g, BIO-Maisstärke nativ: 100 g, spices of choice: 50 g.

  2. Cook Tomato Base: Heat the BIO-Tomatenmark 28TS in a large pot over medium heat. Add the BIO-Agavendicksaft and the BIO-Essig, Tafelessig and bring to a boil while stirring constantly.

  3. Stir in Thickener: Dissolve the BIO-Maisstärke nativ in some cold water and slowly stir into the boiling tomato mixture until the desired consistency is achieved.

  4. Season: Add the BIO-Salz, unjodiert (Atlantik Meersalz) and the spices. Stir well for even distribution.

  5. Bottling: Pour the finished ketchup into sterilized bottles or containers and seal immediately. Store cool or pasteurize to extend shelf life.
