Preparation

These BIO Volanti are characterized by their simple production and the possibility of scaling for large-scale productions. They offer flexibility in further processing and are ideal for various sauces and preparations.

Preparation of BIO Volanti for 50 servings

  1. Put semolina into a large bowl and mix with water until a uniform dough is formed.
  2. Roll out the dough on a floured work surface and cut into the desired shape.
  3. Let the cut Volanti rest on a tray sprinkled with BIO-Salt, non-iodized (Atlantic Sea Salt).
  4. Bring water to a boil in a large pot, add the Volanti and cook for 8-10 minutes until they are al dente.
  5. Drain and drizzle with BIO-Extra Virgin Olive Oil to prevent sticking.
