    Fresh pasteurised organic whole milk gets thickened with the aid of vacuum, and eventually gets gently spray-dried. The organic whole milk powder comes 100 % from organic farms and is produced in Austria. Before the production of the milk powder, the fat content is adjusted that is, either the milk is skimmed or diluted with skim milk to achieve the desired fat content. This is necessary because the natural fat content of milk varies throughout the year. As with other milk powders (organic skimmed milk powder 30.002, organic whey powder 30.003), the organic whole milk is gently dried in a spray tower so that the ingredients are retained in the best possible way. The organic milk is thickened under vacuum and sprayed via a fine nozzle system in a spray tower. The remaining moisture is evaporated with hot air via a subsequent fluidized bed. Organic whole milk powder can be used all year round, uncomplicated, microbiologically worry-free, exactly like fresh milk. In contrast to fresh milk, it can be stored for a very long time without any loss of quality. It is used very successfully from large kitchens to industrial processors.

Preparation

The BIO-Berger is characterized by its traditional production and long maturation, which gives it a unique taste and excellent durability.

Preparation of BIO-Berger for 20 Loaves

  1. Preparation: Dissolve the BIO-Vollmilchpulver in 100 liters of water and heat to 32°C. This forms the basis for cheese production.

  2. Cultivation: Add the microorganism cultures and let the mixture rest for 30 minutes to allow the cultures to develop.

  3. Coagulation: Add the rennet substitute and gently stir the mixture. Let the milk rest for 45 minutes until it solidifies.

  4. Cutting: Cut the coagulated milk into small cubes and gently stir to separate the whey.

  5. Heating: Increase the temperature to 38°C and continue to heat the cheese mass for 30 minutes while stirring constantly.

  6. Pressing: Put the cheese mass into molds and press lightly to remove excess whey.

  7. Salting: Soak the loaves in a solution of BIO-Salt, uniodized (Atlantic Sea Salt) for 24 hours to improve taste and shelf life.

  8. Maturing: Let the loaves mature in a cool room at 12°C for at least 3 months to develop the full flavor.
