Preparation
The recipe is extremely minimalist, low in allergens, and free of additives. It offers a crispy, gluten-free snack solution with a long shelf life and is ideal for industrial production as well as a base for creative snack variations.
Preparation of BIO Buckwheat Crispy Slices for 40 servings (approx. 2x3 cm)
- Mix: Finely grind 2 kg of BIO-Buckwheat Kernels peeled (alternatively use buckwheat flour directly) and mix dry with 20 g of BIO-Salt, non-iodized (Atlantic Sea Salt).
- Make dough: Slowly add 1.2 l of water (approx. 30°C) and process with a planetary mixer into a homogeneous, slightly viscous dough. Optionally, 10 g of BIO-Guar Gum can be added as a binder for better cutting stability.
- Roll out & Shape: Spread the dough 5 mm thick on baking paper or a silicone mat. Pre-cut into even bars (2x3 cm) with a dough scraper.
- Bake: Bake in a convection oven at 180°C (preheated) for approx. 18-22 minutes until golden brown and crispy. Turn the trays halfway through for even browning.
- Cool & Portion: After baking, immediately remove from the oven, let cool and break along the cut lines into individual slices.
- Pack: After completely cooling, pack dry and airtight to maintain the crispiness. Ideally suited for self-service packaging or snack portions.
Tip: For variations, you can sprinkle BIO-Pumpkin Seeds Cucurbita pepo var. styriaca or BIO-Brown Flax Seeds as a topping before baking.
