Organic egg yolk powder
Organic egg yolk powder is made from chicken eggs from certified organic agriculture. The extracted organic egg yolk is gently spray-dried. Due to its lecithin content (lecithins; from Greek λέκιθος lekithos "egg yolk"), organic egg yolk has particularly emulsifying properties, i.e. it promotes the mixing of fat and water. These properties are used to thicken soups and sauces, in which case it is called alloying, instead of binding. For 1kg of powder, the yolks of 120 eggs are dried. Conversely, this means that 1kg of powder mixed with 1.25kg of liquid equals about 120 yolks.

Organic chicken eggs from certified organic Austrian agriculture are separated into yolk and white after breaking. The yolk is filtered, pasteurized and gently spray dried. It is a perfect substitute for fresh egg yolk as it is always available and very clean to use. In addition, dried egg products always offer the advantage that microbial contamination (keyword salmonella) is not a problem.

Worth knowing about organic egg yolk powder:
The yolk of a chicken egg consists of about 50% water, 30% fat, 15% protein, carbohydrates and minerals.
The color of the yolk can be controlled by the feed. The typical coloration results from the carotenoids xanthopuyll, luetein, zeaxanthin and carotene. Green feed and corn cause a strong yellow coloration, an orange-gold coloration can be obtained with red peppers. In organic farming it is not allowed to feed hens with additional colorants. Dried egg products always offer the advantage that microbial contamination (keyword salmonella) is not a problem.
How to use organic egg yolk powder?
For the production of liquid yolk you have to mix organic egg yolk powder (=dried yolk, egg yolk powder, dried egg yolk, egg yolk powder) 1:1,25 with water. The egg yolk powder can also be mixed well with other dry ingredients and further processed.
