Preparation
This BIO Barbecue Sauce offers a unique blend of natural ingredients that impress both in terms of taste and shelf life. The use of smoked salt gives the sauce a special note that sets it apart from others.
Preparation of BIO Barbecue Sauce for 20 Servings
- Preparation: Measure all ingredients. Prepare 2 liters of water.
- Caramelizing: Heat BIO-Karamellsirup mild in a large pot over medium heat until it takes on a golden brown color.
- Mixing ingredients: Add 400 g BIO-Tomatenmark 28TS, 250 ml BIO-Essig, Tafelessig, 500 g BIO-Zucker goldgelb (=BIO-Rohrohrzucker) and 100 g BIO-Maisstärke nativ. Stir well.
- Seasoning: Add 50 g BIO-Pfeffer schwarz gemahlen griffig, 20 g BIO-Knoblauchpulver, 30 g BIO-Senfkörner gemahlen, 20 g BIO-Salz, unjodiert (Atlantik Meersalz) and 10 g of smoked salt.
- Cooking: Bring the mixture to a boil while stirring constantly, then reduce the heat and let it simmer for 30 minutes.
- Thickening: Add 10 g BIO-Guarkernmehl to further thicken the sauce. Let it simmer for another 10 minutes.
- Bottling: Pour the hot sauce into sterile bottles and seal immediately. Store in a cool and dark place.
