Preparation of BIO Chili Ketchup for 50 servings

  1. Prepare tomatoes: Mix 10 kg of BIO-Tomatenmark 28TS with 5 kg of water and bring to a boil.
  2. Add onions: Add 2 kg of BIO-Zwiebelstreifen to the pot and let it simmer for 10 minutes.
  3. Sweeten and season: Add 1.5 kg of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich). Stir in 500 g of BIO-Apfelpulver 0 - 2 mm and 1 l of BIO-Essig, Tafelessig.
  4. Incorporate spice mix and mustard seeds: Stir in 200 g of BIO-Senfkörner gemahlen and 100 g of BIO-Chili-Paprika Pulver. Add 50 g of BIO-Knoblauchpulver and other spices to taste.
  5. Reduce and refine: Let it simmer for 45 minutes until the desired consistency is reached.
  6. Bottle and pasteurize: Fill into sterile bottles and pasteurize at 85°C for 15 minutes.
