Due to its lecithin content (lecithins; from Greek λέκιθος lekithos "egg yolk"), organic egg yolk has particularly emulsifying properties, i.e. it promotes the mixing of fat and water. These properties are used to thicken soups and sauces, in which case it is called alloying, instead of binding. For 1kg of powder, the yolks of 120 eggs are dried. Preparation

This BIO Delicatessen Mayonnaise impresses with its creamy texture and long shelf life, ideal for use in gastronomy and retail.

Preparation of BIO Delicatessen Mayonnaise for 50 servings

  1. Preparation: Bring all ingredients to room temperature to ensure optimal emulsion.
  2. Emulsifying: Slowly pour 4 liters of BIO-Sonnenblumen-KERNÖL into 500 ml of water while stirring constantly until a homogeneous mass is formed.
  3. Egg yolk mixture: Incorporate 400 g of BIO-Eigelbpulver (=Eidotterpulver), 100 g of BIO-Salz, unjodiert (Atlantik Meersalz), and 200 ml of BIO-Essig, Tafelessig into the oil-water mixture.
  4. Seasoning: Add 300 g of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 200 g of BIO-Senfkörner gemahlen, and 100 ml of BIO-Zitronensaftkonzentrat and mix thoroughly.
  5. Finalizing: Beat the mixture at medium speed until a creamy consistency is achieved.
  6. Packaging: Fill into sterile containers and store cool. The mayonnaise is good for up to 3 months.
