Preparation
This recipe offers an innovative combination of traditional mashed potatoes and nutrient-rich quinoa, ideal for the health market and gluten-free diet.
Preparation of BIO Gnocchi with Quinoa for 50 servings
- Make mashed potatoes: Bring 7 kg of water to a boil and stir in 3.5 kg of BIO-Kartoffelflocken extra cremig. Refine with 50 g of BIO-Rosmarin-Extrakt Typ BSZ as an antioxidant.
- Prepare dough: Grind 1 kg of BIO-Quinoa Körner =Andenhirse to obtain 1 kg of quinoa flour. Mix this with 500 g of BIO-Maisstärke nativ, 500 g of BIO-Kartoffelstärke extra trocken, 500 g of BIO-Reismehl, and 100 g of BIO-Salz, unjodiert (Atlantik Meersalz).
- Shape gnocchi: Mix the dry ingredients with the mashed potatoes until a homogeneous dough is formed. Shape the dough into rolls and cut into small pieces.
- Cook gnocchi: Cook in boiling water until they rise to the surface. Drain and toss in a bowl with some BIO-Olivenöl nativ extra.
- Pack and store: Pack gnocchi in portions and freeze at -18 °C to ensure shelf life.
