Organic whole milk powder S 26 % 30.0014.5 kgOrganic whole milk powder S 26 % 30.001Fresh pasteurised organic whole milk gets thickened with the aid of vacuum, and eventually gets gently spray-dried. The organic whole milk powder comes 100 % from organic farms and is produced in Austria. Before the production of the milk powder, the fat content is adjusted that is, either the milk is skimmed or diluted with skim milk to achieve the desired fat content. This is necessary because the natural fat content of milk varies throughout the year. As with other milk powders (organic skimmed milk powder 30.002, organic whey powder 30.003), the organic whole milk is gently dried in a spray tower so that the ingredients are retained in the best possible way. The organic milk is thickened under vacuum and sprayed via a fine nozzle system in a spray tower. The remaining moisture is evaporated with hot air via a subsequent fluidized bed. Organic whole milk powder can be used all year round, uncomplicated, microbiologically worry-free, exactly like fresh milk. In contrast to fresh milk, it can be stored for a very long time without any loss of quality. During grinding, the beans' cocoa butter melts and the so-called cocoa breakage becomes a liquid cocoa mass. This cocoa mass is then compressed in presses. This combination of fresh strawberries and high-quality whole milk chocolate offers a unique taste experience that stands out due to the use of organic ingredients. The recipe is ideal for mass production and offers excellent shelf life.
Preparation of BIO Strawberries in Milk Chocolate for 50 Servings
- Preparation of the ingredients: Wash and dry 5 kg of fresh strawberries. Make sure the strawberries are completely dry to prevent the chocolate from liquefying.
- Melting the chocolate: Melt 4.5 kg of BIO-Vollmilchpulver together with 500 g of BIO-Kakaopulver roh 10 – 12 % alkalisiert in a water bath at 45°C. Stir continuously until a smooth consistency is achieved.
- Dipping the strawberries: Dip each strawberry individually into the melted chocolate, ensuring it is evenly coated. Allow the excess chocolate to drip off.
- Cooling and hardening: Place the coated strawberries on a baking tray lined with baking paper and let them harden at room temperature.
- Packaging: Once the chocolate has completely hardened, package the strawberries in airtight containers to preserve freshness and quality.
