Its good binding properties make it a gluten-free and vegan substitute for e.g. gelatine or wheat starch. Organic locust bean gum is approved without restriction as a food additive. It stabilises emulsions and prevents the formation of crystals, e.g. in ice cream. Preparation
This recipe offers a cost-effective and scalable solution for the production of BIO-yogurt with strawberry flavor, ideal for retail.
Preparation of BIO Strawberry Yogurt for 50 Servings
- Making the yogurt base: Mix 40 kg of BIO-Joghurtpulver with water to achieve a creamy consistency. Allow the mixture to ferment at 42°C for 4-6 hours.
- Strawberry preparation: Combine 5 kg of BIO-Erdbeer Fruchtpulver with 2 kg of BIO-Rübenzucker weiß and 1 kg of BIO-Maisstärke nativ. Add 500 g of BIO-Johannisbrotkernmehl to thicken the mixture.
- Color and flavor: Add 500 g of BIO-Rote-Rüben Pulver for color intensity. Stir the mixture well.
- Mixing: Add the strawberry preparation to the fermented yogurt and mix everything thoroughly.
- Bottling: Pour the finished yogurt into sterile containers and store it at 4°C.
Shelf life: The yogurt can be kept refrigerated for up to 14 days.
