Preparation

These BIO sausages are characterized by their high-quality organic ingredients and the absence of artificial additives. They offer a traditional flavor, which is given a special note through the use of organic lemon peels and organic dextrose.

Preparation of BIO Thin Sausages for 50 Portions

  1. Preparation of the meat: Mix 49 kg of organic pork and beef in an industrial meat grinder to achieve a uniform consistency.
  2. Seasoning: Add 0.5 kg of BIO-Salt, non-iodized (Atlantic Sea Salt), 0.2 kg of BIO-Lemon Peel Ground, 0.3 kg of BIO-Dextrose, and 0.3 kg of BIO-Sugar white, fine (=BIO-Beet Sugar fine). Mix well to ensure an even distribution of the spices.
  3. Additives: Add 0.1 kg of sodium citrate as an acidity regulator.
  4. Filling into sheep casings: Use a sausage filling machine to fill the seasoned meat mixture into sheep casings. Make sure to portion the sausages evenly.
  5. Maturation: Allow the sausages to mature at controlled temperature and humidity for 24 hours to develop the flavor.
  6. Packaging: Pack the sausages in vacuum-sealed bags to preserve freshness and extend shelf life.
