This BIO Yogurt Vanilla recipe offers a creamy texture and an authentic vanilla flavor, ideal for wholesale. It stands out for its easy scalability and long shelf life.
Preparation of BIO Vanilla Yogurt for 50 servings
- Making the yogurt base: Mix 40 kg of BIO-Joghurtpulver with 32 liters of water until a homogeneous yogurt mass is formed. Allow the mixture to ferment at 40°C for 12 hours.
- Making the vanilla preparation: Combine 10 kg of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 2 kg of BIO-Maisstärke nativ, 500 g of BIO-Johannisbrotkernmehl, and 500 ml of BIO-Vanillekonzentrat BS in a pot. Heat the mixture while stirring constantly until it thickens.
- Mixing yogurt and vanilla: Once the yogurt base is ready, add the vanilla preparation. Stir the mixture thoroughly to ensure even distribution.
- Bottling and storing: Pour the finished yogurt into sterile containers. Seal the containers and store them at 4°C. The yogurt is good for up to two weeks.
