Preparation

This recipe offers a creamy, vegan alternative to classic mayo, ideal for retail. The use of sunflower protein and guar gum ensures a stable emulsion and a pleasant texture.

Preparation of BIO Vegan Mayo for 20 servings

  1. Create Emulsion: In a large mixing bowl, slowly and evenly stir 1 liter of BIO-Sonnenblumen-KERNÖL into 500 ml of water until a homogeneous emulsion is formed.
  2. Refine Taste: Add 50 ml of BIO-Essig, Tafelessig and 30 g of BIO-Rohrohrzucker. Mix well until the sugar is completely dissolved.
  3. Incorporate Protein and Thickener: Work in 100 g of sunflower protein and 10 g of BIO-Guarkernmehl while constantly stirring to achieve the desired consistency.
  4. Season: Add 20 g of BIO-Salz, unjodiert (Atlantik Meersalz) and 50 g of Dijon MUSTARD and mix thoroughly.
  5. Stabilize: Add 30 g of BIO-Maisstärke nativ and heat the mixture over medium heat while constantly stirring until it thickens slightly.
  6. Cool and Store: Pour the finished mayo into sterilized jars and store in the refrigerator. The mayo is good for up to 4 weeks.
