Preparation of BIO Veggie Vanilli Mellows for 30 servings
- Prepare ingredients: Measure all ingredients exactly. Use BIO-Zucker goldgelb (=BIO-Rohrohrzucker) for the cane sugar, BIO-Sirup Pulver Dextrose DE97 for the dextrose, and BIO-Maisstärke nativ for the cornstarch.
- Make the mixture: In a large kettle, combine BIO-Zucker goldgelb (=BIO-Rohrohrzucker), BIO-Sirup Pulver Dextrose DE97, and BIO-Maisstärke nativ. Heat the mixture over medium heat until it forms a homogeneous mass.
- Add gelling agents: Stir carrageenan and hydrolyzed pea protein into the mixture. Continue heating until the mass becomes viscous.
- Flavoring: Stir in natural vanilla flavor and distribute the mixture evenly.
- Mold and cool: Pour the hot mass into prepared molds and let it cool until it becomes firm.
- Packaging: Once the mellows have cooled, fill them into suitable packaging and seal to preserve freshness.
