    "Sugarcane" with the botanical name Saccharum officinarum belongs to the plant family of grasses (Gramineae). The perennial tropical grass grows up to 5 meters high and has a pithy stem with a diameter of 5 centimeters. To obtain "organic raw cane sugar", this pith is pressed out, the resulting sugar juice is thickened, impurities are separated and finally crystallized. In the production process, the organic golden yellow sugar is not as strongly purified (refined) as white granulated sugar and thus contains even more of the natural brown molasses, which explains the desired light brownish colour. White cane sugar and organic white sugar are chemically identical because when both raw materials (sugar cane, sugar beet) are strongly purified, they always contain the same sugar molecule.

Preparation of BIO Veggie Vanilli Mellows for 30 servings

  1. Prepare ingredients: Measure all ingredients exactly. Use BIO-Zucker goldgelb (=BIO-Rohrohrzucker) for the cane sugar, BIO-Sirup Pulver Dextrose DE97 for the dextrose, and BIO-Maisstärke nativ for the cornstarch.
  2. Make the mixture: In a large kettle, combine BIO-Zucker goldgelb (=BIO-Rohrohrzucker), BIO-Sirup Pulver Dextrose DE97, and BIO-Maisstärke nativ. Heat the mixture over medium heat until it forms a homogeneous mass.
  3. Add gelling agents: Stir carrageenan and hydrolyzed pea protein into the mixture. Continue heating until the mass becomes viscous.
  4. Flavoring: Stir in natural vanilla flavor and distribute the mixture evenly.
  5. Mold and cool: Pour the hot mass into prepared molds and let it cool until it becomes firm.
  6. Packaging: Once the mellows have cooled, fill them into suitable packaging and seal to preserve freshness.
