Preparation of Organic Pesto alla Genovese for 20 Servings

  1. Prepare Basil: Weigh 500 g of BIO-Basilikum gerebelt and place it in a large bowl.
  2. Add Oils: Add 200 ml of BIO-Sonnenblumen-KERNÖL and 200 ml of BIO-Olivenöl nativ extra and mix well.
  3. Prepare Cashews and Pine Nuts: Lightly toast 80 g of BIO-Cashewnüsse ganz and 40 g of pine nuts in a pan.
  4. Add Cheese and Lemon Juice: Stir 150 g of grated PARMIGIANO REGGIANO D.O.P. and 100 ml of BIO-Zitronensaftkonzentrat into the mixture.
  5. Season: Add 20 g of BIO-Salz, unjodiert (Atlantik Meersalz) and 10 g of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) and mix everything well.
  6. Puree Pesto: Puree the entire mixture in a powerful blender until a creamy consistency is achieved.
