Recipe Note
With this recipe, turkey meat is optimally processed and combined with Emmental cheese. The selected ingredients such as skimmed milk powder and sunflower oil ensure the best binding, juiciness, and a modern flavor profile that also reliably succeeds in large quantities.
Preparation
The recipe combines a particularly high proportion of turkey meat with Emmental cheese cubes for an authentic, juicy Käsekrainer character and is ideal for industrial production - with optimized binding, excellent cutting strength, and good heat retention.
Preparation of BIO Cheese Krainer from the Lucky Turkey for 40 pieces (approx. 100 g each)
- Coarsely grind turkey meat (approx. 7.2 kg) and mix in a cutter or mixer with 1.6 kg diced Emmental cheese, 400 g BIO-Skimmed Milk Powder, 200 g BIO-Sunflower SEED OIL, 600 ml water, 120 g BIO-Salt, non-iodized (Atlantic Sea Salt), 20 g BIO-Paprika Powder Sweet, 10 g BIO-Pepper Black Ground Coarse and 60 g BIO-Syrup Powder Dextrose DE97.
- Cool the mixture to +2 to +4°C and finely chop in the cutter until a homogeneous, binding sausage meat is formed. Finally, fold in the Emmental cheese cubes so they are not crushed.
- Fill the sausage meat into sheep casings or collagen casings (caliber 24/26) and twist into sausages.
- Cook the sausages at 75–78°C in a water bath or steam cooker for approx. 30 minutes, until a core temperature of 72°C is reached. Then immediately quench in ice water to stop the cooking process.
- Optional: Briefly smoke at 60°C for 20 minutes to achieve a fine smoky flavor.
- Let cool, vacuum seal and store at +2 to +4°C.
Note: For longer shelf life, it is recommended to pasteurize after packaging.
