This BIO Compote Applesauce is characterized by its simple scalability and long shelf life. It is ideal for large kitchens and retail.
Preparation of BIO Compote Applesauce for 50 Servings
- Prepare apples: Put 47.5 kg of BIO-Apfelwürfel knusprig into a large pot and bring to a boil with 5 liters of water over medium heat.
- Add sugar: Add 2.5 kg of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) to the pot and stir well until the sugar has completely dissolved.
- Add lemon juice: Add 500 ml of BIO-Zitronensaftkonzentrat to enhance the acidity and freshness.
- Add spices and antioxidants: Stir in 100 g of BIO-Zimt gemahlen and 50 g of Ascorbinsäure, für Biorezepte to enhance the flavor and stabilize the color.
- Let the compote simmer: Let the mixture simmer over low heat for about 30 minutes until the apples are soft and the desired consistency is reached.
- Puree and bottle: Puree the compote with a hand blender and fill into sterilized jars. Immediately seal the jars and turn them upside down to create a vacuum.
