Preparation

This BIO Compote Applesauce is characterized by its simple scalability and long shelf life. It is ideal for large kitchens and retail.

Preparation of BIO Compote Applesauce for 50 Servings

  1. Prepare apples: Put 47.5 kg of BIO-Apfelwürfel knusprig into a large pot and bring to a boil with 5 liters of water over medium heat.
  2. Add sugar: Add 2.5 kg of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) to the pot and stir well until the sugar has completely dissolved.
  3. Add lemon juice: Add 500 ml of BIO-Zitronensaftkonzentrat to enhance the acidity and freshness.
  4. Add spices and antioxidants: Stir in 100 g of BIO-Zimt gemahlen and 50 g of Ascorbinsäure, für Biorezepte to enhance the flavor and stabilize the color.
  5. Let the compote simmer: Let the mixture simmer over low heat for about 30 minutes until the apples are soft and the desired consistency is reached.
  6. Puree and bottle: Puree the compote with a hand blender and fill into sterilized jars. Immediately seal the jars and turn them upside down to create a vacuum.
