Preparation

The BIO Sugo Mediterran offers an authentic Mediterranean taste experience with high-quality organic ingredients, which are particularly attractive for wholesale due to their long shelf life and scalable production.

Preparation of BIO Sugo Mediterran for 50 servings

  1. Preparation: Cut the BIO-Zwiebelstreifen into fine cubes and prepare the BIO-Knoblauchpaste classic.
  2. Creating the tomato base: Heat 79% tomatoes in a large pot over medium heat. Add BIO-Tomatenmark 28TS and stir well to create a thick base.
  3. Frying the vegetables: In a separate pan, heat BIO-Sonnenblumen-KERNÖL, sauté BIO-Zwiebelstreifen and BIO-Knoblauchpaste classic until translucent.
  4. Mixing: Add the onion-garlic mixture to the tomato base. Stir in BIO-Kartoffelstärke extra trocken as a thickening agent.
  5. Seasoning: Season with BIO-Salz, unjodiert (Atlantik Meersalz), BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), and spices to taste.
  6. Finalization: Add BIO-Olivenöl nativ extra, 3% olives, 2% capers, and BIO-Zitronensaftkonzentrat. Mix everything well and let it simmer for another 10 minutes.
  7. Bottling: Fill into sterile jars or bottles and seal immediately. Store in a cool and dark place for longer shelf life.
