Preparation
This BIO plum compote stands out due to its natural sweetness and the use of high-quality organic juice concentrates. The combination of spices provides a unique aroma that is both traditional and innovative.
Preparation of BIO Plum Compote for 30 Servings
- Preparation: Wash, pit, and quarter the plums. Use about 9 kg of plums.
- Add sugar: Add 1.3 kg of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) to the plums and mix well.
- Juices and spices: Stir in 300 ml of BIO-Zitronensaftkonzentrat and 200 ml of BIO-Holunderbeersaft Konzentrat. Season with 20 g of BIO-Zimt gemahlen and 10 g of BIO-Nelken gemahlen.
- Cooking: Bring the mixture to a boil in a large pot over medium heat. Then simmer over low heat for about 45 minutes, until the plums are soft and the liquid has thickened.
- Bottling: Fill the hot compote into sterile jars, seal immediately and turn upside down to create a vacuum.
- Let it cool: Let the jars cool upright and store in a cool, dark place.
