Preparation
These pretzels combine the traditional taste with the nutrient density of chickpea flour and whole grain spelt, making them an innovative and healthy alternative on the market.
Preparation of BIO Chickpea Pretzels for 30 Servings
- Dough Preparation: Mix 1060 g BIO-Weizenmehl, 540 g BIO-Dinkelmehl Vollkorn and 220 g BIO-Kichererbsenmehl in a large bowl.
- Adding Ingredients: Add 80 ml BIO-Raps-KERNÖL, 30 g BIO-Hefepulver Germ aktiv, 30 g BIO-Gerstengraspulver vital and 20 g BIO-Salz, unjodiert (Atlantik Meersalz).
- Kneading the Dough: Knead the dough until it is smooth and elastic. Let it rise for 1 hour in a warm place until it has doubled.
- Shaping: Divide the dough into 30 equal portions and shape into pretzels.
- Pretzel Lye: Dip each pretzel into a solution of 1 l water and 30 g sodium hydroxide.
- Baking: Bake the pretzels at 220°C for 15-20 minutes until they are golden brown.
