Preparation

This recipe offers an exquisite combination of roasted cashews and creamy whole milk chocolate, refined with mild caramel. It stands out due to its simple preparation and luxurious taste, ideal for the upscale snack market.

Preparation of BIO Roasted Cashews Full Milk Caramel for 30 Servings

  1. Preparation: Spread the BIO-Cashewnüsse ganz (500g) on a baking tray and roast in a preheated oven at 150°C for 10 minutes until they are golden brown.
  2. Making caramel: Heat BIO-Karamellsirup mild (200g) in a pot until it starts to simmer slightly. Remove from the heat and let it cool.
  3. Melting chocolate: Melt BIO-Vollmilchpulver (200g), BIO-Kakaopulver roh 10 – 12 % alkalisiert (100g) and BIO-Zucker goldgelb (=BIO-Rohrohrzucker) (150g) in a water bath until a smooth mass is formed.
  4. Combine ingredients: Add the roasted cashews to the melted chocolate mass and mix well.
  5. Shape and cool: Fill the mixture into small molds and pour over with the caramel syrup. Let it set in the refrigerator for at least 2 hours.
  6. Packaging: After hardening, remove the pralines from the molds and prepare them in suitable packaging for sale.
