Preparation
The recipe combines ancient grains such as spelt and emmer for a unique, aromatic pastry with excellent freshness preservation and artisanal character. Ideal for industrial processing, suitable for freezing and versatile in portioning.
Preparation of BIO Spelt Ancient Grain Rolls for 30 pieces à 80 g:

Dough preparation:
- Mix 1250 g BIO-Spelt flakes and 750 g BIO-Emmer whole grain flour with 200 g BIO-Spelt flakes (as a sprout substitute) in the kneading machine.
- Coarsely grind 200 g BIO-Emmer grain and mix in.
- Add 100 g BIO-Honey Forest & Blossom Honey from Austria and 100 ml BIO-Sunflower-SEED OIL.
- Add 30 g BIO-Salt, non-iodized (Atlantic Sea Salt).
- Sprinkle in 150 g BIO-Yeast powder Germ active.
- Gradually incorporate 1200 ml water (e.g., filtered spring water).
- Optional: Add 300 g BIO-Natural sourdough Spelt for flavor and freshness.

Kneading:
- Knead the dough for 8 minutes slowly and 4 minutes quickly until it is smooth and elastic.
- Aim for a dough temperature of 24–26°C.

Dough rest:
- Let the dough rest covered for 30 minutes at room temperature.

Portioning and shaping:
- Divide the dough into 30 portions of approx. 80 g each.
- Shape into round rolls and place on baking trays lined with baking paper.

Proofing:
- Let the rolls rest covered for 40–50 minutes at 30°C and 75% relative humidity.

Baking:
- Preheat the oven to 220°C (steaming recommended).
- Score the rolls, sprinkle with BIO-Spelt flakes if desired.
- Bake for 18–20 minutes at 210°C falling to 190°C until golden brown.

Cooling and packaging:
- Let cool on a rack after baking.
- After completely cooled, for longer shelf life, place in suitable packaging (e.g., paper bag, thermoforming film).
