This recipe for BIO Spelt Spaetzle offers a healthy alternative to traditional spaetzle and is perfect for industrial production. The use of spelt and turmeric not only gives the product a special taste, but also an appealing color.

Preparation of BIO Spelt Spaetzle for 30 servings

  1. Prepare dough: Add 55.1% BIO-spelt flakes with 6.5% BIO-spelt semolina into a large mixing bowl. Add 15 eggs in the form of BIO-whole egg powder. Mix everything well.
  2. Add liquid ingredients: Stir in 500 ml of water, 50 ml of BIO-sunflower KERNEL OIL, and 10 ml of BIO-vinegar, table vinegar. Process everything into a smooth dough.
  3. Season: Add 15 g of BIO-salt, non-iodized (Atlantic sea salt) and 5 g of BIO-turmeric powder (=BIO-turmeric) to enhance color and taste.
  4. Shape Spaetzle: Press the dough through a spaetzle press into boiling salted water. As soon as the spaetzle rise to the surface, they are done.
  5. Quench and drain: Rinse the finished spaetzle in cold water and let them drain well.
  6. Serve: The spaetzle can be served directly or vacuum-packed and frozen for longer shelf life.
