    "Sugarcane" with the botanical name Saccharum officinarum belongs to the plant family of grasses (Gramineae). The perennial tropical grass grows up to 5 meters high and has a pithy stem with a diameter of 5 centimeters. To obtain "organic raw cane sugar", this pith is pressed out, the resulting sugar juice is thickened, impurities are separated and finally crystallized. In the production process, the organic golden yellow sugar is not as strongly purified (refined) as white granulated sugar and thus contains even more of the natural brown molasses, which explains the desired light brownish colour. White cane sugar and organic white sugar are chemically identical because when both raw materials (sugar cane, sugar beet) are strongly purified, they always contain the same sugar molecule.

Preparation

This BIO Tomato Sauce Herbs stands out due to its natural ingredient list and the ability to easily scale for large productions. It offers a balanced herb mix that intensifies the taste and ensures a long shelf life.

Preparation of BIO Tomato Sauce Herbs for 20 servings

  1. Prepare tomatoes: Wash 13 kg of fresh tomatoes, roughly chop them and put them in a large pot.
  2. Fry onions and garlic: Fry 1.8 kg of BIO-Onion Strips and 200 g of BIO-Garlic Paste Classic in 500 ml of BIO-Olive Oil Extra Virgin until translucent over medium heat.
  3. Add tomato paste: Add 2.2 kg of BIO-Tomato Paste 28TS to the onions and briefly roast it with them.
  4. Add tomatoes and water: Add the prepared tomatoes and 1 liter of water to the pot, stir well.
  5. Add spices: Add 100 g of BIO-Oregano Rubbed, 100 g of BIO-Thyme Rubbed/Cut, 150 g of BIO-Parsley Leaf, Fine, 100 g of BIO-Black Pepper Ground Coarse and 100 g of BIO-Salt, Non-Iodized (Atlantic Sea Salt).
  6. Add lemon juice and sugar: Stir in 200 ml of BIO-Lemon Juice Concentrate and 200 g of BIO-Sugar Golden Yellow (=BIO-Raw Cane Sugar).
  7. Cook: Bring the mixture to a boil and then let it simmer over low heat for 2 hours, stirring occasionally.
  8. Bottle: Pour the hot sauce into sterilized jars, seal immediately and turn upside down to create a vacuum.
