Preparation
This BIO Tomato Sauce Herbs stands out due to its natural ingredient list and the ability to easily scale for large productions. It offers a balanced herb mix that intensifies the taste and ensures a long shelf life.
Preparation of BIO Tomato Sauce Herbs for 20 servings
- Prepare tomatoes: Wash 13 kg of fresh tomatoes, roughly chop them and put them in a large pot.
- Fry onions and garlic: Fry 1.8 kg of BIO-Onion Strips and 200 g of BIO-Garlic Paste Classic in 500 ml of BIO-Olive Oil Extra Virgin until translucent over medium heat.
- Add tomato paste: Add 2.2 kg of BIO-Tomato Paste 28TS to the onions and briefly roast it with them.
- Add tomatoes and water: Add the prepared tomatoes and 1 liter of water to the pot, stir well.
- Add spices: Add 100 g of BIO-Oregano Rubbed, 100 g of BIO-Thyme Rubbed/Cut, 150 g of BIO-Parsley Leaf, Fine, 100 g of BIO-Black Pepper Ground Coarse and 100 g of BIO-Salt, Non-Iodized (Atlantic Sea Salt).
- Add lemon juice and sugar: Stir in 200 ml of BIO-Lemon Juice Concentrate and 200 g of BIO-Sugar Golden Yellow (=BIO-Raw Cane Sugar).
- Cook: Bring the mixture to a boil and then let it simmer over low heat for 2 hours, stirring occasionally.
- Bottle: Pour the hot sauce into sterilized jars, seal immediately and turn upside down to create a vacuum.
