This recipe offers a balanced combination of freshness and fruit flavor, ideal for industrial production with long shelf life and easy scalability.
Preparation of BIO Yogurt with Blueberry-Peach for 20 Servings
- Prepare the yogurt base: Mix 5 kg of BIO-Joghurtpulver with 15 liters of water and stir until a smooth consistency is achieved.
- Prepare the fruit: Heat 600 g of BIO-Heidelbeer (=Blaubeere) Fruchtpulver FD and 400 g of BIO-Pfirsichstücke in a pot with 500 g of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) and 200 ml of water. Let it simmer while stirring constantly until the fruits are soft.
- Add gelling agent: Stir 50 g of Pektin, für Biorezepte (=Apfelpektin) into the hot fruit mixture and let it simmer for another 5 minutes.
- Combine: Let the fruit mixture cool down and gently fold it into the yogurt.
- Fill and store: Fill the finished yogurt into portion cups and store it cool.
Note: The yogurt can be stored at 4°C for up to 10 days.
