Preparation
This organic chickpea stew offers an exotic flavor note through the combination of coconut milk and pineapple juice concentrate. It is ideal for vegan cuisine and impresses with its easy preparation and long shelf life.
Preparation of Organic Chickpea Stew for 20 Servings
- Chickpeas soak overnight in water. Drain and rinse the next day.
- Cut onions into fine strips and sauté in a large pot with some BIO-Kokosnussöl kaltgepresst, nativ until they are translucent.
- Dice carrots and bell peppers and add to the onions. Sauté for another 5 minutes.
- Add chickpeas and water, bring to a boil and let simmer over medium heat for about 30 minutes until the chickpeas are soft.
- Add coconut milk and BIO-Ananassaftkonzentrat and stir well.
- Season with sea salt, BIO-Schnittlauch Röllchen, spices and BIO-Zucker goldgelb (=BIO-Rohrohrzucker).
- Dissolve cornstarch in cold water and stir into the stew to thicken it. Let simmer for another 5 minutes.
- Stir in apple puree and serve the stew warm.
