Preparation
This lentil spread offers a perfect combination of protein and taste, ideal for vegan and gluten-free diets. It is cost-effective and easily scalable for industrial production.
Preparation of BIO Coarse Lentil Spread for 20 Servings
- Cook lentils: Bring 4 liters of water to a boil in a large pot. Add 1 kg of green lentils and simmer for about 20-25 minutes until they are soft. Drain and let cool.
- Fry onions and garlic: Heat 200 ml of BIO-Sonnenblumen-KERNÖL in a large pan. Add 800 g of BIO-Zwiebelstreifen and 100 g of BIO-Knoblauchpaste classic and fry until golden brown.
- Roast sunflower seeds: Roast 300 g of BIO-Sonnenblumenkerne in a separate pan without oil until they are fragrant.
- Mix and season: In a large bowl, combine the cooked lentils, fried onions, roasted sunflower seeds, 120 g of BIO-Tomatenmark 28TS, 60 g of BIO-Sellerie Knolle Pulver, 20 g of BIO-Kardamom Pulver, 30 g of BIO-Majoran gerebelt, 20 g of BIO-Muskatnuss gemahlen, 15 g of BIO-Pfeffer schwarz gemahlen griffig, 10 g of BIO-Piment (=Neugewürz) gemahlen and 50 g of BIO-Salz, unjodiert (Atlantik Meersalz).
- Puree: Puree the mixture in an industrial blender or with a hand blender until a coarse, spreadable consistency is achieved.
- Bottle and store: Fill the spread into sterile containers and seal. Store cool and consume within 10 days.
