Preparation
This recipe offers a crispy texture and an intense cocoa flavor, ideal for use in breakfast or snack products. It is easily scalable and is excellent for mass production.
Preparation of BIO Cocoa Rice Crispies for 50 servings
- Mix rice flour and BIO-Soja-Lecithin in a large bowl.
- Melt BIO-Zucker goldgelb (=BIO-Rohrohrzucker) and BIO-Sirup Pulver Dextrose DE97 in a pot over medium heat until a homogeneous mass is formed.
- Stir BIO-Kakaopulver roh 10 – 12 % alkalisiert and BIO-Kakaopulver roh 10 – 12 % alkalisiert into the sugar mass.
- Pour the mixture over the rice flour and mix well.
- Spread the mass on a baking tray lined with baking paper and distribute evenly.
- Bake at 150°C for 15 minutes until the mass is firm.
- Let it cool and break into bite-sized pieces.
