Preparation
This organic fig mustard stands out due to its unique combination of sweet figs and spicy mustard. The use of high-quality organic ingredients ensures an intense flavor and a long shelf life, ideal for retail.
Preparation of BIO Fig Mustard Vegan for 20 servings
- Preparation of the figs: Soak the BIO-figs chopped in 200 ml of water and let them swell for 30 minutes.
- Making the mustard base: Mix 200 g of yellow BIO-mustard seeds ground with 300 ml of water, 100 ml of BIO-vinegar, table vinegar, and 20 g of BIO-salt, non-iodized (Atlantic sea salt). Process everything in a blender to a smooth paste.
- Adding the figs: Drain the soaked figs and add them to the mustard base. Mix everything thoroughly again.
- Sweetening and seasoning: Add 200 g of BIO-sugar golden yellow (=BIO-raw cane sugar), 5 g of BIO-curcuma powder (=BIO-turmeric), 5 ml of BIO-lemon peel oil and 5 ml of BIO-orange peel oil. Mix everything well.
- Bottling: Fill the fig mustard into sterilized jars and seal tightly. Store in a cool and dark place.
