Preparation
This BIO King Oyster Mushroom Bolognese offers an innovative, vegan alternative to classic Bolognese, with an intense umami flavor of the king oyster mushrooms and a long shelf life due to the use of tomato flakes.
Preparation of BIO King Oyster Mushroom Bolognese for 30 servings

Preparation of ingredients:
- Rehydrate 71% BIO-Tomatenflocken 9 mm with water.
- Slice 14% king oyster mushrooms into fine slices.
- Finely chop onions.

Sautéing:
- Heat BIO-Sonnenblumen-KERNÖL in a large pot.
- Add onions and BIO-Knoblauchpaste classic and sauté until translucent over medium heat.

Adding the mushrooms:
- Add the sliced king oyster mushrooms and fry until lightly browned.

Preparing the tomato sauce:
- Add the rehydrated tomato flakes and BIO-Tomatenmark 28TS to the pot.
- Season with BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), BIO-Salz, unjodiert (Atlantik Meersalz), and BIO-Zitronensaftkonzentrat.
- Mix potato starch in cold water and add to the sauce to achieve the desired consistency.

Simmering:
- Let the sauce simmer on low heat for at least 30 minutes to allow the flavors to develop.

Seasoning and serving:
- Season with BIO-Kräutersalzmischung 12-er and other spices to taste.
- Serve hot or fill into sterile containers and freeze for later use.
