The selection of ingredients is crucial, especially for traditional specialties like Munich white sausage. Preparation
This recipe allows for an authentic, low-allergen white sausage with clearly declared ingredients and high freshness, ideal for industrial production and longer shelf life.
Preparation of BIO Munich White Sausage for 50 pieces (approx. 2.5 kg end product)
- Meat Preparation: Coarsely chop pork (1275 g), bacon (375 g), veal (175 g), and pork rinds (250 g) and keep separately chilled. Pre-cool the meat and rinds well (0–2 °C) and, if necessary, slightly freeze.
- Onion Base: Boil 50 g of BIO-Onion Strips or BIO-Onion Powder with some water (a total of 400 ml water for the entire mass) and let it cool. For a finer taste, a part of the onion can also be used as BIO-Onion Strips roasted.
- Chopping: First, finely chop the pork rinds with a part of the water in the cutter, then add pork, veal, and bacon. Gradually add the remaining ingredients (cooked onions, 45 g BIO-Honey Forest & Blossom Honey from Austria, 45 g rock salt or BIO-Salt, non-iodized (Atlantic Sea Salt), 1.5 g BIO-Pepper white ground, 1.5 g mace, 5 g BIO-Parsley Leaf, fine, 1 g BIO-Lovage chopped Maggi herb, 0.5 g BIO-Cardamom Powder, 1.5 g BIO-Lemon peels ground) and stabilizer (sodium citrates, if needed, alternatively binders like BIO-Wheat Starch native). Chop the mass very finely until a homogeneous, light sausage meat is formed.
- Seasoning and Emulsifying: The mass should not exceed a temperature of max. 12 °C. If necessary, adjust with ice water. Taste and season if necessary.
- Filling: Fill the sausage meat into prepared, clean pork casings (caliber 26/28) and twist into sausages about 12–15 cm long. Alternatively, a part of the mass can be filled into jars or bags for convenience products.
- Cooking: Cook the white sausages in 75–78 °C hot water for about 25 minutes (do not boil!). Then cool quickly.
- Packaging: For longer shelf life, vacuum seal the white sausages and, if necessary, pasteurize. For retail sale, a MAP packaging or vacuum packaging is recommended.
- Storage: Store cool at a maximum of 4 °C. Shelf life depending on packaging and pasteurization 10–21 days.
