Preparation

The recipe combines gluten-free oat bread with carrot and pumpkin into an innovative, fiber-rich product that is ideal for professional processing and trade due to its cutting resistance, freshness preservation, and vegan ingredients.

Preparation of BIO Oat Bread Carrot & Pumpkin sliced for 20 loaves of approx. 500g each

  1. Prepare the pre-dough: Mix 1 kg of BIO-Haferflocken Großblatt with 1.2 l of water and 50 g of BIO-Hefepulver Germ aktiv in a large kneading machine. Let it swell covered at room temperature for 1 hour.
  2. Make the main dough: Add 600 g of millet flour (alternatively: finely grind BIO-Hirse Körner goldgelb), 200 g of BIO-Süßlupinenmehl, 300 g of carrot pieces (alternatively: 60 g of BIO-Karottenpulver + 240 g of water), 80 g of BIO-Kürbisfleisch Pulver, 30 g of BIO-Guarkernmehl, 30 g of BIO-Salz, unjodiert (Atlantik Meersalz) to the pre-dough. Knead everything intensively for 10 minutes.
  3. Dough rest: Let the dough rest covered at 28°C for 45 minutes.
  4. Processing: Divide the dough into 20 portions of approx. 900 g each, put into loaf pans or shape into loaves. Sprinkle with BIO-Kürbiskerne Cucurbita pepo var. styriaca if desired.
  5. Final proofing: Let it rise for another 45 minutes at 32°C and high humidity.
  6. Baking: Bake in a preheated oven at 220°C falling to 180°C, with steam, for approx. 45–50 min. Core temperature at the end: at least 95°C.
  7. Demoulding and cooling: Remove the breads from the moulds and let them cool on a rack. After completely cooled, portion and package.

Tip: For longer freshness, it is recommended to add 30 g of BIO-Raps-KERNÖL per dough. For a particularly moist crumb, 5% BIO-Flohsamen can be added.
