Preparation
This vegan Aioli offers a creamy texture and an intense flavor, without any animal products. It is ideal for industrial production and has a long shelf life.
Preparation of BIO Aioli Vegan for 20 servings
- Preparation of the base: Mix 500 ml of water with 250 ml of BIO-Sunflower-KERNÖL and 50 ml of BIO-Olive oil extra virgin in a large container.
- Emulsify: Add 100 g of BIO-Cornstarch native and blend the mixture with a high-performance blender until a smooth consistency is achieved.
- Season: Add 50 g of BIO-Garlic paste classic, 30 g of BIO-Mustard seeds ground, 20 g of BIO-Curry powder sweet, and 15 g of BIO-Salt, non-iodized (Atlantic Sea Salt).
- Sweeten: Add 100 g of BIO-Syrup classic DE60 and blend again.
- Thicken: Add 10 g of BIO-Guar gum and blend until the aioli reaches the desired thickness.
- Taste and Store: Finally, season with 50 ml of BIO-Vinegar, table vinegar and 10 g of BIO-Soup powder clear vegetable broth. Pour into sterile jars and store in a cool place.
