Preparation
This recipe offers a fruity-refreshing combination of yogurt and orange, ideal for the mass market. The use of concentrated ingredients allows for easy scalability and shelf life.
Preparation of BIO Yogurt Orange for 50 servings
- Make the yogurt base: Mix 40 kg of BIO-Joghurtpulver with water according to the manufacturer's instructions to obtain a creamy yogurt base.
- Prepare the orange mixture: Mix 2 kg of BIO-Orangensaftkonzentrat, 1 kg of BIO-Zucker goldgelb (=BIO-Rohrohrzucker), 0.5 kg of BIO-Zitronensaftkonzentrat, 0.1 kg of BIO-Orangenschalenöl, and 0.2 kg of pectin. Gently heat the mixture to 85°C until it thickens.
- Combine the yogurt and orange mixture: Add the orange mixture to the yogurt base and stir well.
- Bottle and cool: Pour the yogurt into suitable containers and cool it at 4°C for at least 4 hours before serving.
