Preparation of BIO Chickpea-Coconut Stew for 20 servings
- Preparation: Soak the chickpeas in water overnight. Rinse and drain the next day.
- Prepare vegetables: Peel carrots and sweet potatoes and cut into small cubes. Finely chop onions.
- Cooking process: Heat BIO-Kokosnussöl kaltgepresst, nativ in a large pot. Add onions and BIO-Knoblauchpaste classic and sauté until translucent.
- Seasoning: Add BIO-Curcumapulver (=BIO-Kurkuma), BIO-Kreuzkümmel Kumin gemahlen, BIO-Ingwerpulver, BIO-Kardamom Pulver, BIO-Chili-Paprika Pulver, BIO-Pfeffer schwarz gemahlen griffig and BIO-Koriander ganz and briefly roast until the spices are fragrant.
- Add liquid: Add the drained chickpeas, carrots, sweet potatoes, peas and mango puree to the pot. Deglaze with water and BIO-Kokosnussöl kaltgepresst, nativ.
- Let the stew simmer: Let the stew simmer over medium heat for about 45 minutes until the chickpeas are soft.
- Thicken: Slightly thicken with BIO-Reismehl and season with BIO-Salz, unjodiert (Atlantik Meersalz).
- Serve: Serve hot and garnish with fresh herbs as desired.
