Preparation
This gluten-free ciabatta impresses with its rustic, Italian-inspired crust, high freshness retention, and excellent processing characteristics for professional use.
Preparation of BIO Ciabatta Rustica (gluten-free) for 20 loaves of approx. 400 g each
- Prepare pre-dough: Mix 200 g BIO-Reismehl, 120 g BIO-Reismehl, 480 g water and 10 g BIO-Hefepulver Germ aktiv. Let it mature for 2 hours at 28°C.
- Prepare main dough: Mix the pre-dough with 1250 g BIO-Wachsmaisstärke nativ, 400 g BIO-Maismehl, 400 g BIO-Kartoffelquellstärke kaltquellend/Instant, 120 g BIO-Leinsamen braun (finely ground), 60 g BIO-Flohsamen, 180 g BIO-Sonnenblumen-KERNÖL, 80 g BIO-Erbsengranulat texturiert (finely ground), 60 g BIO-Sirup Pulver Dextrose DE97, 40 g BIO-Salz, unjodiert (Atlantik Meersalz), 20 g BIO-Guarkernmehl and 10 g Xanthan (outside catalog).
- Knead dough: Process all ingredients into a homogeneous, slightly sticky dough in a kneading machine for 8 minutes slowly and 3 minutes quickly. If necessary, add water (up to 200 ml) to achieve a smooth consistency.
- Dough rest: Let the dough rest covered at room temperature for 45 minutes.
- Shaping: Divide the dough into 20 portions, shape each one into a long form, place on baking paper and spray with water.
- Proofing: Let it rise for 45 minutes at 32°C and 80% humidity.
- Baking: Bake in a preheated oven at 230°C (falling to 200°C), with steam, for 35–40 minutes until golden brown. Release steam after 10 minutes.
- Cooling & Packaging: After baking, place the loaves on a rack and let them cool completely. For longer shelf life, store in suitable packaging under a protective atmosphere.
