The spread impresses with artisanal roasting flavors, finely tuned spices, and a creamy texture. The recipe is optimal for industrial production, offers long shelf life, is declaration-friendly and flexibly scalable.
Preparation of BIO Liver Spread from the Lucky Turkey for 20 servings (each 100 g)
- Preparation: Carefully remove tendons and skin from turkey liver (824 g), turkey hearts (200 g), and turkey meat (308 g) and roughly dice. Chill the ingredients until processing.
- Frying: Heat BIO-Sonnenblumen-KERNÖL (60 g) in a large pot to 120°C. Fry liver, hearts, and meat in portions until roasting aromas develop. Add roasted onions (from BIO-Zwiebelstreifen geröstet, 80 g) and briefly roast together.
- Emulsifying: Melt poultry fat (494 g, alternatively BIO-Palmfett or BIO-Sonnenblumen-KERNÖL) and mix with the fried ingredients. Deglaze with water (200 g) and heat to 80°C.
- Binding: Stir potato starch (from BIO-Maisstärke nativ or BIO-Wachsmaisstärke nativ, 60 g) in some cold water and incorporate into the mixture while stirring constantly. Briefly bring to a boil until the mixture is creamy.
- Seasoning: Add BIO-Salz, unjodiert (Atlantik Meersalz) (20 g), BIO-Pfeffer bunte Mischung ganze Körner (2 g, ground) and other spices to taste (e.g. BIO-Majoran gerebelt, BIO-Thymian gerebelt/geschnitten, BIO-Muskatnuss gemahlen, each 1-2 g). For the typical seasoning, incorporate BIO-Sirup Pulver Dextrose DE97 (3 g) and possibly BIO-Rote Rüben Pulver fein (4 g) for color and a slight sweetness. Optional: BIO-Suppenpulver klar Gemüsebrühe (5 g) for more umami.
- Fine Grinding: Puree the hot mixture very finely with a cutter or industrial mixer until a spreadable, homogeneous paste is formed.
- Filling & Pasteurizing: Fill the hot mixture (at least 75°C) into sterile jars or cans. Seal immediately and pasteurize at 90°C for 60 minutes to ensure safe shelf life.
- Cooling & Storing: Allow the jars to cool slowly and then store in a cool and dark place. Shelf life: 3 months unopened.
