    Organic wheat starch is obtained from wheat flour from organic farming. In a purely physical process, the starch and protein fractions (= "gluten") are separated from each other ("washed out") by means of water, then the white starch milk is dried "natively" without further degradation. Organic wheat starch can be used universally when it comes to thickening, consistency and binding. After heating and cooling a water starch mixture, one can observe the binding, swelling, stabilizing and thickening effects (see video). This starch is mainly used in bakery products, but it is also used to thicken desserts, sauces and instant products. Likewise, it plays a role in moisture retention and as an emulsifying and stabilizing agent. It is also used as a release agent for glazes. Gluten-free alternatives are, for example, organic corn starch 21.050 and organic potato starch 20.001.

Preparation

This recipe offers a perfect combination of crispy butter biscuit and delicately melting dark chocolate. It is ideal for large-scale productions and offers a unique taste through the use of high-quality organic ingredients.

Preparation of BIO Shortbread with Dark Chocolate for 50 Servings

  1. Prepare the dough:

    • In a large mixing bowl, combine BIO-Wheat Flour (1 kg), BIO-Raw Cane Sugar (500 g), BIO-Butter (275 g), BIO-Native Wheat Starch (200 g), BIO-Skimmed Milk Powder (100 g), and BIO-Wheat Semolina (50 g).
    • Add 1 tsp of BIO-Salt, non-iodized (Atlantic Sea Salt).
    • Incorporate 5 g of BIO-Ammonium Bicarbonate and 5 g of Baking Soda, for Organic Recipes as leavening agents.
    • Add 10 ml of BIO-Vanilla Concentrate BS for flavor.
    • Knead everything into a smooth dough and let it rest in the refrigerator for 30 minutes.
  2. Shape and bake cookies:

    • Roll out the dough on a floured work surface and cut out cookies with a cookie cutter.
    • Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 180°C for 12-15 minutes until golden brown.
  3. Melt chocolate and apply:

    • While the cookies are cooling, melt BIO-Chocolate Drops, dark (500 g) in a water bath.
    • Dip the cooled cookies halfway into the melted chocolate and let them cool on a rack until the chocolate is firm.
