Preparation of BIO Cherry Yogurt and Chocolate Chips for 50 Servings
- Prepare the yogurt base: Rehydrate 40 liters of BIO-Joghurtpulver with water according to the manufacturer's instructions to achieve a creamy consistency.
- Cherry-Chocolate Chip Preparation: In a large pot, mix 4 kg of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) with 1 kg of BIO-Kirschsaftkonzentrat and 1 kg of BIO-Holunderbeersaft Konzentrat. Heat on medium until the sugar is completely dissolved.
- Add chocolate chips: Stir in 1 kg of BIO-Schokoladetropfen, zartbitter until they are evenly distributed.
- Starch and gelling agent: Stir in 1 kg of BIO-Maisstärke nativ and 200 g of Pektin, für Biorezepte (=Apfelpektin) to achieve the desired consistency.
- Flavoring: Add 100 ml of BIO-Zitronensaftkonzentrat and 50 ml of natürliches Kirscharoma.
- Combination: Fold the cherry-chocolate chip preparation evenly into the yogurt.
- Filling: Pour into 200 ml cups and chill at 4°C for at least 4 hours.
Important: Make sure all ingredients are evenly distributed and the cold chain is not interrupted to ensure quality and shelf life.
