Preparation
This recipe offers a unique combination of high-quality Zotter chocolate and traditional Pain-au-Chocolat dough, ideal for professional production with excellent freshness preservation and attractive premium character.
Preparation of BIO Pain au Zotter-chocolat for 30 pieces
- Prepare the pre-dough: Mix 500 g of BIO-Weizenmehl Type 700 with 20 g of BIO-Hefepulver Germ aktiv and 300 ml of lukewarm Weinviertler spring water. Let it rest covered at room temperature for 30 minutes.
- Prepare the main dough: Add to the pre-dough 500 g of BIO-Weizenmehl Type 700, 80 g of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 50 g of BIO-Honig Wald- & Blütenhonig aus Österreich, 15 g of BIO-Salz, unjodiert (Atlantik Meersalz), 120 g of HöFLMAIERS BIO BUTTER (alternatively: 120 g of BIO-Raps-KERNÖL), 3 organic eggs (alternatively: 150 g of BIO-Volleipulver + 300 ml water) and 200 ml of lukewarm Weinviertler spring water. Knead everything into a smooth dough.
- Dough management: Let the dough rest covered for 60 minutes at about 26°C, then knead briefly and let it rest again for 30 minutes.
- Incorporate chocolate: Chop 400 g of BIO ZOTTER CHOCOLATE, FINE BITTER 60% into small pieces or alternatively use 400 g of BIO-Schokoladetropfen, zartbitter. Fold evenly into the dough.
- Portioning: Divide the dough into 30 equal pieces (approx. 70 g each), shape into elongated rolls and place on baking trays.
- Final proofing: Let the rolls rest covered for 45 minutes at 28°C. If desired, brush with beaten egg (or BIO-Volleipulver-water mixture).
- Baking: Bake in a preheated oven at 180°C convection for about 16-18 minutes until golden brown. Let it cool down after baking.
- Packaging & Shelf Life: Once completely cooled, place in suitable freshness packaging. The product has a shelf life of at least 5 days when stored properly (cool, dry).
