Preparation
This BIO Curry-Mango Sauce combines fruity and spicy flavors and is ideal for industrial production due to its scalability and long shelf life.
Preparation of BIO Curry-Mango Sauce for 20 servings
- Preparation of ingredients: Mix 500 ml of BIO-Raps-KERNÖL, 200 g of BIO-Zucker goldgelb (=BIO-Rohrohrzucker), 300 ml of BIO-Essig, Apfelessig 5%, and 500 ml of water in a large pot.
- Creating the fruit base: Add 160 g of mango puree, 100 g of BIO-Tomatenmark 28TS, 50 g of BIO-Marillen Aprikosen Würfel, and 50 ml of BIO-Zitronensaftkonzentrat. Stir well.
- Seasoning: Add 40 g of BIO-Salz, unjodiert (Atlantik Meersalz), 30 g of BIO-Maisstärke nativ, 20 g of BIO-Currypulver süß, 50 g of BIO-Zwiebelpulver, 10 g of BIO-Guarkernmehl and a selection of spices to taste.
- Cooking: Heat the mixture over medium heat and let it simmer while stirring constantly until the sauce thickens.
- Bottling: Pour the hot sauce into sterile bottles or jars and seal them immediately. Let them cool at room temperature before storing.
