This dessert offers a crispy and juicy texture at the same time, achieved by using {BIO-Apfelwürfel knusprig} and {BIO-Vollmilchpulver}. It is ideal for large-scale production and offers a long shelf life.
Preparation of BIO Dessert Kaiserschmarrn in Applesauce for 30 Servings
- Prepare apples: Peel and core 15 kg of apples and cut them into small pieces. Alternatively, use 10 kg of BIO-Apfelwürfel knusprig for a crispy variant.
- Make applesauce: Boil the apple pieces with 2 L of water and 500 g of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) until they are soft. Puree and keep warm.
- Kaiserschmarrn dough: Mix 3 kg of BIO-Vollmilchpulver, 2 kg of flour, 1 kg of BIO-Eigelbpulver (=Eidotterpulver), 500 g of BIO-Salz, unjodiert (Atlantik Meersalz) and 1 kg of BIO-Sirup Pulver Dextrose DE97 into a smooth dough.
- Fry Kaiserschmarrn: Fry the dough in portions in a hot pan with 1 L of BIO-Raps-KERNÖL until golden brown. Then tear into pieces and continue frying.
- Serve: Serve the warm Kaiserschmarrn with the applesauce and sprinkle with BIO-Zimt gemahlen.
