Preparation
The recipe offers a gluten-free, vegan, and protein-rich alternative to classic grain rolls. The combination of various seeds and dietary fibers ensures long-lasting freshness, high satiety, and attractive appearance - ideal for retail, catering, or as a frozen product.
Preparation of BIO Grainy Rolls (gluten-free) for 40 pieces of approx. 70 g each
- Mix dry ingredients: In a large bowl, mix BIO-Maisstärke nativ, BIO-Wachsmaisstärke nativ (optional), BIO-Reismehl, BIO-Maismehl, BIO-Apfelfasern, BIO-Leinsamen braun (whole and crushed), BIO-Sesamkörner natur, BIO-Flohsamen, BIO-Erbsengranulat texturiert, BIO-Guarkernmehl, Xanthan, BIO-Salz, unjodiert (Atlantik Meersalz) and BIO-Brotgewürzmischung well.
- Activate yeast: Mix BIO-Hefepulver Germ aktiv with some lukewarm water (approx. 50 ml of the total amount) and a pinch of starch, then let it stand for 5 minutes until the yeast is activated.
- Prepare dough: Add the remaining water (approx. 650 ml) and the activated yeast water to the dry ingredients. Add BIO-Sonnenblumen-KERNÖL. Process with a spiral kneader or planetary mixer for 8 minutes slowly and 3 minutes quickly into a homogeneous, slightly sticky dough.
- Dough rest: Let the dough rest, covered, for 30 minutes at 28–30 °C (proofing cabinet recommended).
- Portion and shape: Weigh the dough into 40 portions of approx. 70 g each. Shape each portion into a roll, moisten the surface slightly and, if desired, roll in additional BIO-Sesamkörner natur, BIO-Leinsamen braun or BIO-Sonnenblumenkerne.
- Proofing: Place the rolls on baking trays lined with baking paper. Let them rise, covered, for another 40 minutes at 28 °C.
- Baking: Spray the rolls with water and bake in a preheated oven at 220 °C (convection) with a lot of steam. After 10 minutes, release the steam and bake for another 18–20 minutes until golden brown and crispy.
- Cooling and packaging: After baking, place on a rack and let cool thoroughly. Then, for longer shelf life, put in suitable freshness packaging.
Note: For extended freshness, it is recommended to add BIO-Apfelfasern and to pasteurize after baking.
