Preparation

This gluten-free sliced bread is particularly juicy, sliceable, and stays fresh for a long time thanks to selected starches, psyllium, and pea protein - perfect for professional processing and marketing.

Preparation of BIO Light Sliced Bread for 20 loaves of 500 g each

  1. Prepare the pre-dough: Mix 600 ml water (lukewarm, 30–35°C) with 220 g BIO-Maisstärke nativ, 90 g natural rice sourdough (made from rice flour and water), 80 g rice flour and 12 g BIO-Hefepulver Germ aktiv in a kneading machine. Let it rest covered at room temperature for 30 minutes.
  2. Prepare the main dough: Add the pre-dough, 130 g BIO-Hirse Körner goldgelb (alternative for flakes), 60 g corn flour, 40 g BIO-Sonnenblumen-KERNÖL, 25 g BIO-Flohsamen (ground), 30 g BIO-Erbsengranulat texturiert (as a protein source), 18 g BIO-Salz, unjodiert (Atlantik Meersalz), 25 g BIO-Essig, Apfelessig 5%, 20 g BIO-Sirup Pulver Dextrose DE97, 10 g BIO-Guarkernmehl, 5 g Xanthan (not in the catalog, can be replaced by another 5 g BIO-Guarkernmehl), 6 g BIO-Brotgewürzmischung, 4 g BIO-Zitronensaftkonzentrat to the kneading machine. Knead slowly for 8 minutes and quickly for 3 minutes until a homogeneous, slightly sticky dough is formed.
  3. Dough rest and portioning: Let the dough rest covered for 30 minutes. Then divide into 20 portions of approx. 500 g each and place in greased, cornmeal-dusted loaf pans. Smooth the surface with water.
  4. Final proofing: Let the dough pieces rise for 45–60 minutes at 30°C and 70% humidity until the volume has significantly increased.
  5. Baking: Bake in a preheated oven at 220°C falling to 200°C with a lot of steam for 15 minutes. Release steam, bake for another 35 minutes. The core temperature should be 94–96°C.
  6. Unmolding and cutting: Remove the breads from the molds and let them cool on a rack. After completely cooled, slice and package.

Storage: Store in a dry, cool place protected from heat. After opening, store in the refrigerator and consume within 2 days.
