Preparation
The recipe combines traditional brioche dough characteristics with regional, innovative ingredients such as potato and Powidl. The use of dry components ensures excellent shelf life and allows for flexible, industrial processing.
Preparation of BIO Potato-Brioche Poppy Seed Crescent Rolls for 30 pieces
- Prepare the pre-dough: Mix 500 g BIO-Weizenmehl Type 700, 20 g BIO-Hefepulver Germ aktiv, 50 g BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich) and 300 ml lukewarm water (alternatively: spring water). Let it rest covered for 30 minutes.
- Knead the main dough: Combine the pre-dough with another 500 g BIO-Weizenmehl Type 700, 200 g cooked, mashed potatoes (e.g. Niedermayers Bio potatoes), 100 g BIO-Volleipulver (equivalent to approx. 8 fresh eggs), 150 g BIO-Vollmilchpulver, 200 g BIO-Butter Süßrahm, 100 g BIO-Topfen Pulver, 100 g BIO-Weizenkeime, 100 g BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 15 g BIO-Salz, unjodiert (Atlantik Meersalz), 1 tsp BIO-Vanilleschoten pulver, 1 tsp BIO-Zimt gemahlen and 10 ml BIO-Zitronenschalenöl (as a substitute for lemon liqueur) into a smooth dough. Let it rest covered for 60 minutes at 28°C.
- Prepare the filling: Mix 250 g BIO-Mohn Blaumohn with 150 ml hot milk (alternatively: 40 g BIO-Vollmilchpulver + 110 ml water), 80 g BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 1 tsp BIO-Zimt gemahlen, 1 tsp BIO-Vanilleschoten pulver and zest of 1 lemon (alternatively: 1-2 tsp BIO-Zitronenschalenöl). Stir in 100 g BIO-Powidl.
- Portion the dough: Divide the dough into 30 portions, shape each into a round, roll out and spread with the poppy seed-Powidl filling. Shape into crescents and place on baking trays.
- Proofing: Let the crescents rise again for 30 minutes at 28°C.
- Baking: Bake in a preheated oven at 180°C top/bottom heat for approx. 18-20 minutes until golden brown.
- Optional finishing: While still warm, brush with melted butter (alternatively: melt BIO-Butter Süßrahm) and sprinkle with BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich).
Note: For longer shelf life and industrial production, the use of BIO-Volleipulver, BIO-Vollmilchpulver and BIO-Topfen Pulver is recommended, as well as cooling the finished crescents in suitable packaging.
