    Organic beet syrup (="beet pulp") is the concentrated juice of sugar beets from certified organic agriculture without their plant fibers and without additives. It is uniformly dark brown, viscous and is obtained by thickening beet juice pressed from the cooked beet pulp. For production, the beets are carefully washed, crushed by machine and then steamed at high temperatures for up to 13 hours. The temperature treatment partially converts sucrose into glucose and fructose. The resulting pulp is then further filtered and the resulting juice is steamed/boiled until the viscous sugar beet syrup is obtained. Thus, beet syrup is a purely natural product with no additives. Your recipes will benefit from the mild rounded sweetness this beet syrup brings to your products and can be seen as a homegrown alternative to maple syrup. It is already being used successfully in organic baked goods, as an organic spread, to enhance sauces and generally as an alternative sweetener.

Preparation

By combining rye and whole wheat, this roll offers a particularly full-bodied flavor, high fiber density, and a juicy, firm crumb. The recipe is optimally designed for industrial production, high freshness retention, and easy cutting.

Preparation of organic whole grain toast rolls made from rye and wheat cut for 40 rolls (each approx. 60 g)

  1. Prepare pre-dough: Thoroughly mix 600 g of BIO-Roggenvollkornschrot with 600 g of water and 10 g of BIO-Hefepulver Germ aktiv. Let it rest covered at room temperature for 2 hours.
  2. Prepare main dough: Mix the pre-dough with 600 g of BIO-Weizenvollkornmehl, 150 g of BIO-Roggenmalz Quellmehl, 150 g of BIO-Rübensirup, 120 g of BIO-Raps-KERNÖL, 30 g of BIO-Salz, unjodiert (Atlantik Meersalz), 40 g of BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 30 g of BIO-Gerstengraspulver vital (as malt substitute), 40 g of BIO-Gerstengraspulver vital (malt flour substitute) and 400 ml of water in a kneading machine for 10 minutes slowly, then 3 minutes quickly to a smooth, elastic dough.
  3. Dough rest: Let the dough rest covered for 30 minutes at 26-28°C.
  4. Form rolls: Divide dough into 40 portions of approx. 60 g each, shape into round rolls and press lightly flat. Place on baking trays lined with baking paper.
  5. Final proofing: Let the rolls rise covered for approx. 50 minutes at 30°C until they have risen significantly.
  6. Baking: Spray rolls with water, bake in a preheated oven at 220°C (falling to 200°C) with steam for approx. 18-20 minutes until golden brown.
  7. Cooling and cutting: Let the rolls cool on a rack and cut in half horizontally after they have completely cooled down.

Note: For longer freshness and better cutting stability, BIO-Weizenkleber (=gluten) vital (optional, approx. 40 g) can be added.
