Preparation
The recipe provides a 100% vegan, creamy ice cream base with a stable texture and long shelf life. The formula is ideal for industrial processing, suitable for freezing, and free from soy, gluten, and lactose.
Preparation of BIO Cocoa Ice Cream VEGAN for 20 servings (approx. 100 ml each)
- Carefully mix dry ingredients (except chocolate):
- BIO-Kakaopulver roh 10 – 12 % alkalisiert, BIO-Zucker goldgelb (=BIO-Rohrohrzucker), BIO-Sirup Pulver Dextrose DE97, BIO-Guarkernmehl, BIO-Johannisbrotkernmehl, BIO-Inulin, BIO-Akazienfaser, pinch of BIO-Salz, unjodiert (Atlantik Meersalz).
- Prepare liquid components:
- Add water and BIO-Kokosnussöl kaltgepresst, nativ (as a substitute for coconut milk/coconut cream) together with BIO-Cashewnüsse ganz (finely pureed as a substitute for cashew cream) into a large mixing container.
- Homogenize dry and liquid ingredients:
- Slowly sprinkle the dry ingredients into the liquid while constantly stirring to avoid lumps. Mix for at least 5 minutes on high speed with an industrial mixer or homogenizer.
- Incorporate chocolate:
- Melt BIO-Schokoladetropfen, zartbitter (alternatively: BIO-Kakaopulver roh 10 – 12 % alkalisiert + additional BIO-Kokosnussöl kaltgepresst, nativ) in a water bath and mix into the mass.
- Add emulsifier:
- Add BIO-Sonnenblumen-KERNÖL as an emulsifier and homogenize again.
- Pasteurize:
- Heat the entire mixture to 85°C and hold for 2 minutes (pasteurization), then immediately cool to 4°C.
- Allow to mature:
- Let the mass mature for at least 4 hours (better overnight) in the cold storage.
- Freeze:
- Freeze creamy in a professional ice cream machine at -22°C to -25°C. For industrial production: use continuous freezing system.
- Portion and shock freeze:
- Fill the ice cream into desired containers and immediately shock freeze (-35°C) for optimal ice crystal structure and shelf life.
- Storage:
- Store at -18°C. Shelf life: 12 months when the cold chain is maintained.
