Preparation
The recipe combines crispy chocolate cookie with creamy caramel ice cream filling and is ideal for industrial production thanks to professional ingredient selection and processing techniques - with long shelf life and high customer appeal.
Preparation of BIO Ice Cream Cookies Chocolate Salted Caramel for 30 servings (approx. 30 ice cream cookies)
- Dough preparation: Mix all dry ingredients - BIO-Weizenmehl Type 700, BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), BIO-Zimt gemahlen, BIO-Salz, unjodiert (Atlantik Meersalz), Natron Speisesoda, für Biorezepte - homogeneously in a large mixing bowl.
- Incorporate fat and egg components: Stir BIO-Volleipulver in water, dissolve BIO-Vollmilchpulver in water, whip BIO-Palmfett (as a substitute for butter) until creamy and stir in with the prepared egg and milk components as well as BIO-Sirup Pulver Dextrose DE97 (for an additional caramel note).
- Add chocolate and cocoa: Fold BIO-Schokoladetropfen, zartbitter and BIO-Kakaopulver 20-22% evenly into the dough. Add BIO-Karamellsirup dunkel for the caramel note. Optional: BIO-Vanilleschoten pulver for a fine aroma.
- Let the dough rest: Cover the finished dough and let it rest in the refrigerator for 30 minutes.
- Shape and bake: Form the dough into small balls, press lightly flat and place on a baking tray lined with baking paper. Bake in a preheated oven at 175°C (convection) for about 12-14 minutes until the cookies are golden brown. Let cool completely after baking.
- Prepare ice cream base: For the ice cream filling, process BIO-Vollmilchpulver, BIO-Volleipulver, BIO-Sirup Pulver Dextrose DE97, BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), BIO-Kakaopulver 20-22%, BIO-Karamellsirup dunkel and BIO-Vanilleschoten pulver with water and BIO-Palmfett (as a substitute for whipped cream and butter) into a homogeneous mass. Pasteurize (85°C, 2 minutes), then cool quickly.
- Freeze ice cream: Put the ice cream base into the ice cream machine and let it freeze. Shortly before the end of the freezing time, add BIO-Schokoladetropfen, zartbitter and coarse pieces of BIO-Karamellsirup dunkel.
- Assemble ice cream cookie: Spread one cookie with a layer of ice cream, place a second cookie on top as a lid and press lightly. Immediately freeze the finished ice cream cookies.
- Storage and shelf life: The ice cream cookies are shelf-stable for at least 3 months at -18°C. Store and transport frozen for delivery.
