    Organic wheat starch is obtained from wheat flour from organic farming. In a purely physical process, the starch and protein fractions (= "gluten") are separated from each other ("washed out") by means of water, then the white starch milk is dried "natively" without further degradation. Organic wheat starch can be used universally when it comes to thickening, consistency and binding. After heating and cooling a water starch mixture, one can observe the binding, swelling, stabilizing and thickening effects (see video). This starch is mainly used in bakery products, but it is also used to thicken desserts, sauces and instant products. Likewise, it plays a role in moisture retention and as an emulsifying and stabilizing agent. It is also used as a release agent for glazes. Gluten-free alternatives are, for example, organic corn starch 21.050 and organic potato starch 20.001.

Before the production of the milk powder, the fat content is adjusted that is, either the milk is skimmed or diluted with skim milk to achieve the desired fat content. This is necessary because the natural fat content of milk varies throughout the year. As with other milk powders (organic skimmed milk powder 30.002, organic whey powder 30.003), the organic whole milk is gently dried in a spray tower so that the ingredients are retained in the best possible way. These crescents combine potato, walnut, and apricot for a unique, juicy texture and exceptional freshness - ideal for innovative bakery products with an extended enjoyment period.

Preparation of BIO Potato-Brioche Walnut Crescents for 40 pieces

  1. Prepare the pre-dough: Stir 500 ml lukewarm water, 60 g BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 50 g BIO-Hefepulver Germ aktiv and 200 g BIO-Weizenstärke nativ, let it mature for 20 minutes at 28°C.
  2. Prepare the dough: Knead 1,000 g BIO-Weizenstärke nativ, 200 g BIO-Weizenkeimlinge, 400 g cooked, mashed BIO-Kartoffelwürfel, 180 g BIO-Volleipulver, 300 g BIO-Vollmilchpulver, 200 g BIO-Joghurtpulver, 200 g BIO-Butter, 80 g BIO-Lactose (=Milchzucker), 200 g BIO-Topinamburknolle Pulver, 20 g BIO-Salz, unjodiert (Atlantik Meersalz), 2 g BIO-Zimt gemahlen, 2 g BIO-Vanillekonzentrat BS and the pre-dough into a smooth, elastic dough (kneading time: 10 minutes slow, 3 minutes fast). Dough temperature: 24-26°C.
  3. Dough rest: Let the dough rest covered for 30 minutes at room temperature.
  4. Prepare the filling: Coarsely chop 400 g BIO-Walnußkerne Hälften, mix 400 g BIO-Marillen Aprikosen Würfel, 200 g BIO-Zucker weiß (=BIO-Rübenzucker aus Österreich), 100 g BIO-Sirup Pulver Dextrose DE97, 2 g BIO-Zimt gemahlen, 20 g BIO-Zitronenschalenöl and 50 ml BIO-Alkohol Ethanol (=Weingeist) into a spreadable mass.
  5. Shape: Divide dough into 40 portions, roll each into an oval, spread filling on top, shape into crescents and place on baking sheets.
  6. Proofing: Let the crescents rest covered for 35 minutes at 28°C and 75% relative humidity.
  7. Baking: Bake in a preheated oven at 180°C (convection) for 18-20 minutes until golden brown. After baking, dust with BIO-Staubzucker (=BIO-Puderzucker).
  8. Cooling & Packaging: Let the crescents cool completely, then package airtight. Shelf life when stored cool: approx. 5 days.
